First find a cup (preferably stainless steel but porcelain will work the one in the picture is 16 oz).  Next grind your coffee (I use 3 – 4 coffee-scoop scoops). Pour in hot water 30 seconds off the boil, let seep for 4 minutes, then strain into either a small wire strainer or multiple strainers to catch unnecessary grounds. Today it primarily is dominated by the overwhelming amount of drive-thru stands.  Despite the majority of quick espresso service stations there are sit down coffee shops where an Everettite or visitor can sit and comfortably pass the time away.  One such coffee shop is Zippy's Java Lounge purveyors of Hines Public Market Coffee and crusaders of coffee enlightenment.  A community center where artists and locals can gather to enjoy a cup of coffee, food, or an ice cream soda.  Wonderful. Word on the street was that Tutta Bella was one of the few places in town that had a manual espresso machine (a rarity in Seattle) so we had to verify the rumor.  We were greeted with very hospitable service and Attibassi Coffee pulled (like our sources told us) from a manual espresso machine in complete suave style.  Very impressive! It requires technical skill and improvisational mastery.  To bring about the essence and flavor of the coffee bean requires serious training and constant dedication.  One such roaster is Neal Brown who provides all Fair Trade all Organic Coffees to the masses.  I decided to stop by and pay Neal a visit who in good nature put me to work. Many books have been written on the subject and many people dedicate themselves to realizing a better-tasting cup.  A good barista is constantly striving for espresso perfection.  Making espresso is a continual battle against the array of environmental factors and variables.  The desired end result is similar to calculus: convergence on the limit.  I equate a delicious espresso with an Aristotelian play containing three curtains: a beginning, middle, and end -- followed by a delicious lingering aftertaste.  The picture above was almost converging on the limit.  That cup of little brown bubbles had great extraction timing, a fantastic heavy body with a buttery mouth-feel, a subtle sweetness  and a great finish. And now this great part of town is complimented with a tasty new urban coffee roaster.  Right next to the Deluxe Junk near the Statue of Lenin in the ally. I will call such individuals "windowsmashers" (see Seattle WTO 1999).  To these individuals I must retort.  I believe that such windowsmashers are simply misguided.  People who like coffee should love Starbucks.  Starbucks consistently pays some of the highest prices for green beans to its farmers.  They create coffee house locations that people enjoy going to (creating new coffee markets in places that previously did not exist).  Starbucks is a big company that strives to live up to its ideals.  It produces friendly baristas and offers part time benefits.  They offer great music and a wide variety of different coffees, teas, and other concoctions.  The consequences of Starbucks are good.  For those who absolutely need a coffee corporation to bash they are out there --do a little research -- they just don't stand out (not so green and clean as Starbucks).  For the coffee enthusiast, instead of being a Starbucks hater windowsmasher, simply drink or make better coffee than Starbucks offers -economic law of supply and demand (that would be an inclusive "or" either drink or make or both.). So what better to refresh and quench one's thirst than an iced latte?  As a special treat I recommend an iced latte in a jam jar (frosted glass preferable): rustic yet appropriate (and they come in multiple sizes based on preference, I recommend a 5-7  oz jar).  If you are willing to put in the time top off with some cold foam (or warm for variation).  Goes extremely well with coffee ice cream.  For me this combination is extremely relaxing while sitting outside enjoying a beautiful sunny day (satisfied with my drink and remembering my grandma's fine cooking.) One is the Bauhaus Books and Coffee on Capitol Hill and the other is All City Coffee in Pioneer Square.  &lt;a href="http://www.allcitycoffee.com"&gt;All City Coffee &lt;/a&gt;has a great location and makes a great macchiato. As is evident from this photo.  If you tamp too hard a terrible pressure seal is formed and all the electrical and water pressure is focused like a laser directly on the head of the portafilter resulting in the bottom steel cracking and exploding right off. ... Actually I made all that up (though it sounds pretty cool).  The first part is right don't tamp too hard.  The real lesson to be learned is don't try to screw on a portafilter spout with a wrench and twist it so tight that it screws right off. Then, nostalgia and inspiration struck.  Obviously what the coffee industry needs is to get hip and create a fantastic liquid coffee based video game.  My self in my love for 8bit games have come up with the preliminary concept ideas and and concept-art:  The Story: A bag full of used coffee cups headed for the city dump accidentally is thrown off the road (near Hanford) and lands into an old bin of toxic waste creating a race of evil-twisted-street-killer-mutant-ninja-vampire-world-dominating-coffee-cups!! Only a band of super baristas can save the day!  I know what you're thinking "That is absolutely fantastic! " And you're right it is.  After years of playing video games in the early 90s what other conclusion could I come to?  I'd say it's some kind of pure genius synthesis. Coffee drinking that involves spoons, tiny cups, and a lot of slurping.  The goal is to distinguish different flavors inside the specific coffee as a means of quality assurance (coffee by nature is very complex).  Why go to all the trouble? Surprisingly, in recent years the cart scene seems to be on the decline (even in the summer season when getting coffee outdoors is such a pleasure) making the operational carts that are left a local rarity and a prize.  This coffee glory can be said about “The Fix,” a fantastic cart south of the Montlake Bridge.  Owner Kate (follower of the Dismas Smith school of espresso preparation) and her crew brave clouds, wind, and rain to serve up a caffeine fix for the masses. This shop was established in 1975 and is part of Seattle's rich coffee tradition.  In my opinion the shop itself radiates a great vibe.  All of the staff “get the job done.”  This coffee house can be equated with the legendary status of the infamous coffee houses of the past.  The very stuff of coffee lore: "Cafe Encore on Brooklyn," "the Place Next Door on 45th," "The Last Exit on Brooklyn," and "The Door and the White Horse." With two locations check them out if you're down by the University of Washington. It added charm to the neighborhood and will be missed.
